With BBQ season in full swing, we thought we’d share some of our favourite summer-time recipes with you! We have a little bit of everything and we promise these are absolutely delicious must-try’s that your family and friends will thank you for!

Allana’s Salmon with Avocado salsa

What You Need:

Blackened Salmon:

  • 1 tbsp oil

  • 4 (6 ounce) pieces salmon

  • 4 tsp cajun seasoning

Avocado & Cucumber Salsa:

  • 4 avocados, diced

  • 1/4 cup red onion, diced

  • 1/4 cup green onion, diced

  • 1 cup cucumber, diced

  • 1 jalapeno, finely diced

  • 1 tbsp cilantro, chopped

  • 1 tbsp parsley, chopped

  • 1 tbsp lemon juice

  • 1 tbsp lime juice

  • salt, to taste

What To Do:

  1. Heat oil in a skillet over medium-high heat. Add salmon (seasoned with cajun seasoning), and cook until blackened on each side.

  2. For the salsa, mix everything together and enjoy on top of the salmon.

Ainsleigh’s Stuffed Baked Potatoes

What You Need:

  • 4 potatoes, washed

  • 2 tbsp margarine

  • 1/2 cup hot milk

  • 1 tsp salt

  • pepper

  • 1/2 cup cheddar cheese, grated

  • 2 green onions, chopped

  • Bacon Bits

  • Paprika

What To Do:

  1. Bake potatoes in oven at 400F for 1 hour.

  2. Cut potatoes in half lengthwise and scoop out the insides.

  3. Mix potato insides with the following seven ingredients.

  4. Return to oven and bake for an additional 15 minutes.

  5. Garnish with paprika.


Jody’s Slow-Cooker Pulled Pork Buns

What You Need:

  • Pork Roast (can be beef)

  • Buns

  • Slow-cooker

  • Sauce

Sauce Ingredients:

  • 1/4 cup ketchup

  • 3/4 cup Heinz chili sauce

  • 2 1/2 cups brown sugar

  • 1/2 cup molasses

  • 3/4 cup apple cider vinegar

  • 3/4 cup water

  • 1/2 cup fresh lemon juice

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/4 cup HP sauce

  • 1/4 cup grain mustard

  • 1 tbsp celery salt

  • 2 tbsp Worcestershire sauce

  • 2 tbsp soy sauce

  • 3 cloves garlic, minced

  • 1/2 cup onions, minced

What To Do:

  1. Season your pork or beef roast with your favourite rub, and combine all the sauce ingredients to form your sauce.

  2. Slow cook meat for 5-6 hours, until fully cooked.

  3. Add in sauce to slow-cooker, and cook on low until the meat is tender and ready to melt in your mouth.

  4. Serve between buns with melted cheese-whiz (or your choice of sauce) and with homemade coleslaw.

Mayson’s Pasta Salad

What You Need:

  • 1 package Kraft pasta salad mix

  • 2 cups pasta

  • 1/3 cup celery, chopped

  • 1/3 cup red pepper, chopped

  • 1/4 cup green onion, chopped

  • 1/3 cup cheddar cheese, cubed

  • 1/3 cup honey ham, diced

  • 1/4 cup relish

  • 1 cup mayonnaise

What To Do:

  1. Cook pasta and then strain and rinse with cold water.

  2. In a serving bowl, mix in the rest of the ingredients and then refrigerate.

  3. Serve cold.


Morgan A’s Peanut Butter Apple S’mores

What You Need:

  • 1 Granny Smith apple

  • 3 giant marshmallows

  • 3 tbsp creamy peanut butter

  • 3 tbsp milk chocolate chips

What To Do:

Use an apple corer to remove the core of the apple then slice into 1/4 inch thick rounds. You should get about 6 rounds.

  1. Spread half the apple slices with peanut butter and sprinkle chocolate chips on top of it.

  2. Roast the marshmallows until melty and golden brown, then place on top the peanut butter and chocolate chips.

  3. Top with the remaining apple slices and enjoy!


Morgan S’ Cinnamon Buns

What You Need:

Dough:

  • 1.5 cups lukewarm water

  • 4 tbsp. sugar

  • 3 tbsp. canola oil

  • 1 egg

  • 4 cups strong flour

  • 1 tbsp. quick rise instant yeast

  • 1/2 tsp. salt

Cinnamon Sugar Filling:

  • 1/2 lb. unsalted butter

  • 2 cup brown sugar

  • 4 tbsp. cinnamon

  • 1.5 tsp. fine sea salt

What To Do:

  1. Prepare cinnamon sugar filling by melting butter, remove from heat and add remaining ingredients. Set aside to cool.

  2. Mix flour, yeast, and salt in one bowl, and the rest of the dough ingredients in another bowl.

  3. Once mixed, combine in one bowl and mix until liquid and dry are amalgamated.

  4. Do not knead. Cover with a towel in a warm place and let sit for 15 minutes.

  5. Punch down, and cover again for 15 minutes.

  6. Punch down, and roll out the dough with a rolling pin.

  7. Once rolled, spread cinnamon sugar filling over dough and shape into cinnamon rolls.

  8. Place cinnamon rolls in a greased pan. Cover with a towel in a warm place and let rise for 1 hour.

  9. Bake at 375° for 21 minutes.


Shae’s Strawberry & steak salad

What To Do:

  1. Marinate your steak for at least two hours, then cook to your desired finish.

  2. Wash all your produce, then cut strawberries and throw the salad together.

  3. Once steak is finished grilling, cut into strips and add on top of salad.

What You Need:

  • 1 bag baby spinach

  • 10-12 strawberries, quartered

  • 1-2 handfuls of blueberries

  • Goat cheese, crumbled

  • Raspberry vinaigrette

  • Steak

Steak Marinade:

  • 1/4 cup Olive Oil

  • 1/2 cup Soy Sauce

  • 1 tbsp Garlic, minced

  • Salt & Pepper, to taste

  • 1 1/2 tbsp Montreal Steak Spice
